It might still feel like summer, but Halloween and Christmas will be here before we know it.

If you’ve had a busy summer and haven’t had a chance to think about your autumn and winter cabinet yet, now is the time to start planning. From Halloween-inspired flavours to nostalgic desserts and Christmas favourites, there are plenty of ways to give your cabinet a seasonal refresh.

Here are some of the flavours we’ve been working on for the months ahead.

 

First up: Halloween

When planning Halloween flavours, don’t just think about the flavour itself. The name and presentation can be just as important.

Look at recognisable characters, films and sweets for inspiration. Think The Nightmare Before Christmas, classic Halloween films and childhood favourites, then turn those ideas into flavours that work for your cabinet.

Sour Apple Sorbet

A bright, sharp and refreshing Halloween option made using Martini Green Apple Paste and Comprital Superlemon Powdered Stabiliser.

The flavour of tangy apple with a light fizz coming from the lemon works perfectly as a vibrant green Halloween sorbet, with decorations adding the finishing touch.

Jack Skellington Oreo

Inspired by one of Halloween’s most recognisable characters, this one combines cookies and cream with the focus being on the decoration, a cremini style Jack Skellington on top of a white chocolate base.

Made using Comprital Fior de Latte Paste, Comprital Crunchy Black, Martini Brunella Bianca for the cremini layer and Martini Black Kiss to create the skeleton design.

Twix or Treat

A Halloween twist on a familiar favourite.

Made using Comprital Frollino Cookie Biscuit Flavour Paste, Comprital Toffee Mou Variegato, Martini Classic Crumble and Comprital Copertura Ciocco Latte.

The combination of biscuit, caramel and chocolate makes this one an easy sell for customers who already know and love the flavours.

 

Banana & BooBerry

A playful Halloween combination of creamy white chocolate, banana and blueberry.

Made using Comprital Cioccolato Bianco White Chocolate Paste, Martini Blueberry Ripple and Gelpro Lush Cheeky Monkey Banana Ripple.

 

Don’t forget the decorations

With Halloween, presentation is half the fun.

You don’t necessarily need to create a completely new flavour to make something feel seasonal. Cake toppers, themed decorations and simple finishing touches can turn an existing flavour into a Halloween special with little extra work.

Autumn & Winter

For our Autumn/Winter recipes, we’ve looked at what’s trending, alongside famous cakes, desserts and drinks, and given them a “newstalgic” twist.

We’ve talked before about the rise of newstalgia at the start of this year – the idea of taking familiar flavours and giving them a modern update. You can read more about this in our article 2026: The Year of Indulgence.

 

Caramelised Banana Latte

We’ve taken inspiration from a very well-known coffee brand for this one, and there’s a reason it’s our September Flavour of the Month.

The banana gives a delicious, fresh fruit flavour with a hint of cinnamon to create a raosted caramised feel, while the coffee is much more subtle, creating a well-balanced combination.

Made using Martini Banana Paste, Comprital Cinnamon Paste, Gelpro Dolce Latte Paste and Comprital Choco Coffee Crunch.

 

Baked Alaska

A classic dessert with plenty of potential for a winter cabinet. Here we see meringue flavour and texture with a little bit of a marzipan background flavour and black cherry. We’ve also toasted some meringue on top!

This version is made using Comprital Meringue Flavour Paste, Comprital Amaretto Biscuit Paste, Fat Coated Meringue Pieces and Comprital Amarena Flavour Ripple.

 

Dubai Cherry Tiramisu

A newstalgic twist on the classic tiramisu. Tiramisu base rippled with a dubai pistachio cream giving nutty flavour and kunafe crunch & sweet black cherry ripple. A real treat!

Made using Martini Tiramisu Paste, Martini Cherry Ripple and Martini Brunella Crok Dubai.

 

Salted Caramel Baklava

Sweet honey and mixed nuts with a pastry base makes this baklava paste a winter winner and with the Brunella salted caramel rippled swirled through this flavour will bring indulgence and luxury to your flavour offering.

Made using Gelpro Baklava Paste and Martini Brunella Gold Salted Caramel.

                                      

 

And then it’s Christmas…

As we get closer to Christmas, the big brands start appearing everywhere – from Toblerone and Maltesers to the flavours we all remember from childhood.

Christmas is a great time to bring some of these familiar flavours into the cabinet, while also looking at nostalgic desserts and giving them a gelato twist.

 

Golden Tobeylerone

A Christmas classic that needs little introduction, but we’ve given it a twist! A white chocolate and caramel base flavour rippled with our chocolate, honey & almond Toby-lerone variegate,

Made using White Chocolate Paste, Gelpro Dolce Latte Paste and Gelpro Tobeylerone Variegato.

 

Chocolate Orange Malteser

Chocolate orange is a familiar Christmas combination which we see more and more from big brands. Malteser rippled through to give extra flavour and texter.

Made using Comprital Superciock Fondente, Martini Orange Paste and Gelpro Lush Maltease.

 

Zillionaire’s Cheesecake

Zillionaire’s Cheesecake proved a hit at the ICA Show this year, so we’ve brought it back for the winter season.

Made using Martini Tutto Fondente, Gelpro Lush Brownie, Comprital Cream Cheese Paste, Gelpro Caramel Paste and Martini Brunella Gold Salted Caramel.

 

Chocolate & Almond Amaretto

Amaretto is another flavour that works particularly well through the colder months. We’ve combined it with chocolate, almond and biscuit flavours for something a little different.

Made using Comprital Amaretto Biscuit Paste, Comprital Monella Chocolate Latte Ripple and La Preferita Amaretto Biscuit Grains.

Seasonal flavours don’t always need to mean completely reinventing your menu.
