There is Low, Medium and High heat treatment in the process of drying milk, it is important always to use the same type in order to maintain consistency of your finished product. We stock Medium treated as this is the one that gives the best emulsification of ice cream. We also support UK farming and the promotion of sustainable food chain by ensuring it is always UK. The milk travels the lowest miles with the processing being 20 miles from Antonelli and the milk sourced from the local area.
